i am affraid that if i write toi when communicating with them the parents will feel insulted as if I am acting as if i am there equal. is there a better way to refer to myself than toi?

It depends on whom you write to.
To your friend: I = Toi, em (female), anh (male)
To your friend's parents: I = Chau or Con
I believe that you can use the pronoun "toi" to anybody. That has nothing to do with insult when you have not mastered the language.
