You are right, i was thinking of people flipping the buns as some burger places do grill your bread bun to make them crunchy but the flipping here should mean flipping the meat. However, it is "nướng" not "chiên." Never worked in burger place before, tơo old for that now. And i think "lật" is the best.

Alright, it is good that we give people enough information & meanings on the word. However, for the sake of the translation, let just settle with "viec nuong thit" or "lam o tiem bogo". People still understand the message/idea and this is what's important.
"Viec nuong thit (hay lat thit nuong, lam o tiem bogo) o tiem bogo khong phai........................"
